To make air fryer carrot muffins, you just need a few things that are already in your cupboard. Let's gather everything and bake a batch of luscious muffins — they use the same warm spices as a classic carrot cake, just in a quicker, single-serve size.

  • 1 cup flour
  • 2 cups fresh carrot (shredded)
  • 2 eggs
  • ⅔ cup vegetable oil
  • ⅔ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder

  • ¼ teaspoon salt
  • 1 teaspoon vanilla essence

Instruction for air fryer carrot muffins:

  1. Thoroughly wash the carrots with clean water and peel off the skin. Grate the carrots with the help of a grater and set them aside.

  2. Now take a mixing bowl to add all-purpose flour, baking powder, baking soda, cinnamon powder, and salt. Mix them until well combined.

  3. Now, let's prepare the wet batter. Take a mixing bowl to add the eggs and sugar first and mix them with the help of a whisk. Mix them until the sugar is completely dissolved.
  4. Then add the oil and vanilla essence. Mix them until well combined.

  5. After the wet batter is ready, add the flour mixture and mix until there are no lumps left.

  6. Now add the shredded carrots to the batter and mix with a spatula.

  7. Preheat your air fryer to 160C/320F for 5 minutes.
  8. Fill of the silicone cup or paper cup. At this point, you can add some chopped walnuts or any other dry fruits as per your liking.

  9. Transfer the muffin cups to the air fryer basket. Be careful — the air fryer basket is hot, so don't burn yourself.

  10. Bake at 160C/320F for 10 minutes. Insert a clean toothpick through the middle of a muffin; if it comes out clean the muffins are perfectly cooked. If not, bake for a minute or two more.

  11. Let the muffins cool for a while. Then you can add the frosting.
