  • ½ teaspoon salt
  • 2 tablespoons butter or oil, melted

Optional add-ins: rosemary, thyme, or garlic for herby bread; flax, sesame, or chia seeds for crunch; or ½ cup shredded cheese for a savoury loaf.

A note on warm liquids: aim for about 110°F, warm on your wrist but not hot. Liquid above 115°F can kill the yeast, and yeast that is too old will not rise, so check the date if you are unsure.

How to make air fryer bread

Step 1: Make the dough

  1. In a large bowl, stir the sugar into the warm water, sprinkle the yeast on top, and let it sit 5 to 10 minutes until foamy. Foam means the yeast is alive and active.
  2. Add the warm milk, flour, salt and melted butter. Mix with a wooden spoon or your hands until a dough forms.
  3. Knead for 5 to 7 minutes, until the dough is smooth and elastic. This develops the gluten that gives the bread its structure.

Step 2: Proof the dough

  1. Cover the bowl with a clean towel and let the dough rest in a warm spot for 1 to 2 hours, until doubled in size.
  2. Punch it down to release the air, then shape it into a round or oval loaf that fits your basket. Give it a short second rise of 20 to 30 minutes, which makes the baked loaf noticeably lighter.

Step 3: Bake in the air fryer

  1. Preheat the air fryer to 350°F (175°C). Lightly grease the basket or line it with parchment paper so the bread does not stick.
  2. Brush the loaf with the egg wash (or melted butter), then score a shallow X or slash in the top with a sharp knife. Scoring lets the bread expand cleanly instead of bursting.

Variations

  • Whole wheat: swap half or all of the flour for whole wheat. It bakes denser and may need a splash more liquid, since whole wheat absorbs more.
