A microwaved Hot Pocket has two temperatures: lava at the ends and frozen in the middle, wrapped in a crust that goes chewy as it cools. The air fryer fixes the crust right away. The first time I tried it, though, I cranked it to 400°F to save time, and the outside went dark brown while the middle was still cold. The crust is fast. The filling is slow.
The fix is a slightly lower temperature, 360°F, and a couple more minutes, so the heat reaches the center before the crust overdoes it. Flip it once, let it rest two minutes, and you get a golden, flaky pocket that is hot all the way through. How to cook a Hot Pocket in the air fryer
- Unwrap completely. Remove the plastic and the crisping sleeve. The sleeve does not go in the air fryer.
- Preheat. Heat the air fryer to 360°F for 3 minutes.
- Place and brush. Put the pocket in the basket with space around it. For a shinier crust, brush with a little melted butter or spray lightly with oil.

- Air fry and flip. Cook 12 to 14 minutes from frozen, flipping at 7 minutes so both sides crisp.

- Check the center. A thermometer in the middle should read 165°F. If the crust is done but the center is not, lower to 330°F and cook 2 more minutes.
- Rest 2 minutes. The filling stays much hotter than the crust. Let it rest before biting.
Homemade pockets: cut the dough into 4 rectangles. Spoon sauce, cheese and pepperoni onto one half of each, leaving a border, fold over and crimp with a fork. Cut a small vent, brush with egg, and air fry at 350°F for 8 to 10 minutes until golden.
