My first pumpkin hand pies leaked. I did what most recipes online still tell you to do, spooned a raw pumpkin pie mixture straight into the pastry, and the filling soaked the bottom crust and boiled out through the crimp before the tops even browned. The problem was not my sealing. Pumpkin pie filling is a custard, designed to be poured as a liquid and set slowly in a crust, and a hand pie cannot hold a liquid. The fix takes 5 minutes and one small pot, and it is the whole reason this page exists.
These are the casual cousin of our full air fryer pumpkin pie, built on the sealing method tested for the hand pies page. They travel to bake sales, hand out at Halloween next to the mummy dogs, and hold the dessert line at Thanksgiving while the oven does whatever the turkey demands.
Quick answer: Cook the filling first, canned pumpkin, brown sugar, spices and a spoon of cornstarch, stirred 5 minutes into a thick paste, then cooled. Fill 4 inch rounds with 2 level tablespoons, seal with water, crimp, cut two vents, and air fry 4 at a time at 350°F for 11 to 13 minutes until deep golden. No flipping.
Why make pumpkin hand pies in the air fryer?
- The fan browns the crust on all sides in 11 to 13 minutes, no flipping, no sheet pan
- Four pies per tray means dessert relays instead of one big bake
- The oven stays free for the roast, the turkey, or nothing at all
- Assembled pies bake straight from frozen, which turns them into a fall version of the frozen cookie dough stash
The filling fix nobody talks about
Most pumpkin hand pie recipes take pumpkin pie filling, pumpkin plus sugar plus spice plus sometimes egg and milk, and spoon it raw into pastry. But that mixture is a custard: pourable by design, meant to set over 40 minutes at low heat. Inside a hand pie at 350°F it stays loose, soaks the bottom, and escapes through the crimp.
So cook it first. Five minutes in a small pot with brown sugar, spices, cornstarch and a pinch of salt drives off pumpkin's extra water, blooms the spices so they taste like more than dust, and thickens the filling into a paste that mounds on a spoon without slumping, the exact standard from the hand pies page. No egg, no milk, nothing raw, so the pie is done when the crust is done. The same logic runs the apple turnovers, where the filling also cooks before it wraps. And do not reach for canned "pumpkin pie filling"; it is pourable by design and stays pourable. Plain pumpkin puree is the right start, and the leftover half can has a whole shelf waiting: pumpkin muffins, pumpkin cookies, or pumpkin bread.
Ingredients for air fryer pumpkin hand pies
- 1 box (2 rounds) refrigerated pie crust, kept cold
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- ⅓ cup brown sugar, packed
- 1 tablespoon cornstarch
- 1½ teaspoons pumpkin pie spice
- Pinch of fine salt
- ½ teaspoon vanilla extract
- 1 egg, beaten with 1 teaspoon water, for the wash
Optional finish: coarse sugar over the egg wash before baking, or a maple glaze after (½ cup powdered sugar, 2 teaspoons milk, 1 teaspoon maple syrup) on fully cooled pies.
Tools you'll need
- An air fryer (any brand)
- A small saucepan for the filling
- A 4 inch round cutter, or a bowl and a knife
- A fork for crimping and a pastry brush for the wash
- Optional: a perforated parchment round, loaded with the pies already on it
Pro tip: oven hand pie recipes are written for 400°F and up, which scorches tops in a basket before the bottom layer bakes. If you are converting a family recipe, the air fryer calculator lands you at the right basket number.
How to make air fryer pumpkin hand pies
- Cook the filling first. Stir the pumpkin, brown sugar, cornstarch, spice and salt in a small pot over medium heat for about 5 minutes, until it thickens into a paste that mounds on a spoon. Stir in the vanilla, spread it on a plate, and cool completely. A warm filling melts the dough it touches.

- Cut the rounds. Unroll the cold pie crusts and cut 16 rounds about 4 inches across, re-chilling and rerolling scraps once. Warm dough tears and seals badly, so keep everything cold.

- Fill with discipline. Place 2 level tablespoons of cooled filling in the center of 8 rounds, leaving a clean half inch border of bare dough. Filling smeared on the border is a seal that was never going to hold.

- Seal, crimp, vent. Brush each border with water, top with a second round, and press the seam closed from the filling outward to push out trapped air. Fork-crimp the full edge firmly, then cut two small vent slits in each top. The vents are where the steam leaves instead of splitting the crimp.

- Egg wash the tops only. Egg on the crimped edge browns it too dark too early; egg on top turns the pie bakery-gold. Sprinkle with coarse sugar if using.
- Air fry. Arrange 4 pies in the basket with space between them, on a light spray of oil or a parchment round loaded with the pies on it. Bake at 350°F for 11 to 13 minutes until deep golden, no flipping. Start checking at 10; the second tray runs about a minute shorter.

- Rest 10 minutes. The filling is lava straight out. Glaze cooled pies, or serve them warm with vanilla ice cream.
All air fryers cook differently. Machines drift about 10 degrees either way, so start checking at 10 minutes the first time and note which way yours leans. Every setting this site has tested lives on the baking chart.

Variations & shapes
- Jack-o'-lantern faces: cut a face into the top round before sealing. The face doubles as extra venting, the rare case of decoration improving the engineering. The rest of the spooky lineup is on the Halloween treats page.
- Pumpkin shapes: a pumpkin cookie cutter turns the same dough into pies that announce their flavor across the table.
- Cheesecake version: stir a spoon of cream cheese into the warm filling for the cheesecake-adjacent pie.
- Puff pastry: flakier, taller shell at the same 350°F for 12 to 14 minutes, with the handling rules from the puff pastry guide.
- With kids: they cut rounds, spoon filling, press forks and paint egg wash at the table; the adult owns the basket, per our baking with kids guide. An enthusiastic crimp still holds.
Tips you shouldn't skip
- The filling must be cold and thick. Warm or loose filling is the number one leak, before any sealing mistake.
- Two level tablespoons, no more. The border decides whether the pie stays shut.
- Press seams outward from the filling to push air ahead of your fingers; trapped pockets split crimps.
- Never skip the vents. Steam exits somewhere; you choose where.
- Doubling for a bake sale is a recipe scaler job.
Storage & freezing
- The filling: keeps 4 days refrigerated, so it can be Sunday's work.
- Unbaked pies: freeze solid on a tray, bag for up to 2 months, and bake straight from frozen at 350°F with 3 to 4 extra minutes. No thawing, and the pies bake fresh on demand.
- Baked pies: 3 days refrigerated. Re-crisp at 350°F for about 3 minutes; the microwave softens the crust you worked for.
What to serve with pumpkin hand pies
Warm with vanilla ice cream, cooled under maple glaze with coffee or chai, or stacked on the party table between the roasted pumpkin seeds and whatever the Halloween spread is serving. The pastry cousins, apple turnovers and cherry pie, round out a fall dessert board.

Frequently asked questions
QHow long do pumpkin hand pies take in the air fryer?
11 to 13 minutes at 350°F, four pies per tray with space between them, no flipping. Start checking at 10 minutes: done is deep golden tops and browned crimped edges. The second tray usually finishes about a minute sooner. A full batch of eight is two trays and roughly 30 minutes of basket time.
QCan you use canned pumpkin pie filling in hand pies?
Not straight from the can. Pumpkin pie filling is engineered to pour, and it stays that loose inside a hand pie, soaking the bottom crust and boiling out through the crimp. Use plain pumpkin puree cooked down 5 minutes with brown sugar, spices and cornstarch until it mounds on a spoon, then cooled. If canned pie filling is all you have, simmer it with a tablespoon of cornstarch until visibly thick and cool it completely, but taste for sweetness first, since it comes pre-sugared.
QWhy do my pumpkin hand pies leak?
Three causes, usually stacked. Thin filling is the big one: raw pumpkin mixtures are wet, and steam pressure forces liquid through any gap, so cook the filling to a thick paste first. Overfilling is second: more than 2 level tablespoons pushes filling onto the border, and dough will not seal to pumpkin. Missing vents are third: without two slits in the top, steam exits through the crimp and splits it open.
QCan you make pumpkin hand pies ahead or freeze them?
Yes, at three stages. The cooked filling keeps 4 days refrigerated. Assembled unbaked pies freeze solid on a tray and keep bagged for 2 months, then bake straight from frozen at 350°F with 3 to 4 extra minutes. Baked pies keep 3 days refrigerated and re-crisp in the basket at 350°F for about 3 minutes.
QCan I use puff pastry instead of pie crust?
Yes. Puff pastry gives a taller, flakier shell where pie crust gives the classic tender snap. Cut the same 4 inch rounds from cold puff pastry, keep the same 2 tablespoon fill and sealing routine, and bake at 350°F for 12 to 14 minutes. Crimp firmly and vent generously, since puff pastry's layers want to open as they rise.
QWhat temperature is best for hand pies in an air fryer?
350°F for pie crust and puff pastry alike: hot enough to set and brown the pastry in 11 to 14 minutes but below the point where the close element scorches the tops before the bottom layer bakes. Biscuit-dough hand pies are the exception and run cooler at 330°F, since enriched dough browns faster. Judge by deep golden color on the crimp, not just the top.
If you make these, I'd genuinely like to know how your basket handled them: leave a rating below, or a comment with your model if the crimp browned faster or slower than 11 minutes.
