Pastry, donuts and muffins look like one breakfast table and bake like three different jobs. The dough decides the dial.
| Bake | Setting | Why |
|---|---|---|
| Puff pastry and pie crust | 350°F, flat | One steady heat sets flaky layers and crisps the bottom in 10 to 14 minutes: the cheese danish, turnovers, hand pies and palmiers all run it |
| Donuts and churros | 330 to 360°F | Enriched yeast rings like the glazed donuts bake gently to stay pale and soft, while churros need 360°F to crisp their ridges |
| Everyday muffins | 320°F | Wet, loaded batters need the center to catch up with the top, which is why the morning glory muffins are called by a 200°F center, not a toothpick |
| Bakery-domed muffins | 370°F, then 310°F | A short hot start raises the dome and a gentle finish sets the middle, the schedule behind the blueberry muffins |
| Box, can and freezer | 320 to 330°F | Toaster strudel and biscuit donuts run 330°F, frozen croissants and boxed muffin mix 320°F |
Morning bakes fail in two places: more cups or pastries than the basket can fit with air between them, and pulling them at the right color with a raw middle. These four tools settle the first, and a cheap thermometer settles the second. They are free, with no signup.
Every number on every card came out of these. If puff pastry would not puff, a muffin sank, or the tops browned before the middle set, the answer is almost certainly in one of them.
Want the rest of the table? The breads and doughs collection, the cake collection and the cookies and bars collection pick up where these leave off, the full recipe index has everything, and the guides index covers the technique behind all of it.
